What's Joan's secret to good taste? The key is these treats arrive frozen, and YOU bake them. As a grandmother dedicated to finding a way to serve her gf grandchildren food that met her high standards of taste, she told me her "Aha!" moment happened while watching chef Ming Tsai on the Food Network prepare fried rice. Ming explained that perfect fried rice requires you to freeze the cooked rice before frying it. This is because the freezing sucks out all of the moisture from the rice [light bulb in Joan's head goes off]. This helped Joan understand why the texture of most gf foods are dry, since most of them are shipped frozen AFTER being baked. To solve this problem, she sends you her dough frozen and double sealed, so you end up with super fresh product to eat, immediately after baking. What would we do without grandma's like Joan?
